My need to use up some leftover peas was inspired when I saw this recipe. But with no macaroni pasta on hand I had to susbstitute, and the closest I could come to a smallish-like pasta was orzo. Don't you love it when necessity creates a winner? This was just a delightful side, next time it won't be leftover peas, I'll be making them fresh just for this tasty and colorful combo.I've cooked/tasted this recipe!This is a variation
%20River%20Cottage%20Veg%20Every%20Day,%20by%20Hugh%20Fearnley%20Whittingstall.%20I'm%20a%20huge%20fan%20of%20HFW!%3C/p%3E%3Cp%3EThis%20is%20more%20than%20just%20a%20veggie%20book,%20filled%20with%20veggie%20recipes.%20Hugh%E2%80%99s%20approach%20to%20vegetables%20is%20from%20the%20green,%20sustainable%20and%20ethical%20food%20and%20fitness%20standpoint.%20I%20tend%20to%20agree%20with%20his%20attitude%20.%20.%20.%20we%20do%20tend%20to%20eat%20far%20too%20much%20meat%20and%20I've%20never%20heard%20of%20anyone%20being%20accused%20of%20eating%20far%20too%20much%20veg%20.%20.%20.%20in%20fact%20we%20are%20always%20being%20encouraged%20to%20eat%20more%20.%20.%20.%20five%20a%20day%20and%20all%20that!%3C/p%3E%3Cp%3EI%20just%20love%20this%20book.%20I've%20toyed%20with%20the%20idea%20of%20becoming%20a%20vegetarian%20off%20and%20on%20through%20the%20years%20.%20.%20.%20it's%20only%20the%20thought%20of%20a%20good%20steak%20that%20makes%20me%20a%20bit%20wobbly%20with%20the%20idea%20.%20.%20.%20but%20I%20do%20try%20to%20incorporate%20more%20vegetarian%20dishes%20into%20our%20menues%20here%20at%20casa%20de%20rayner.%3C/p%3E%3Cp%3EVegetarian%20food%20used%20to%20be%20considered%20quite,%20quite%20boring,%20but%20not%20so%20any%20more,%20and%20this%20fantastic%20book%20makes%20that%20quite%20clear!%20It's%20beautifully%20illustrated%20and%20photographed%20and%20is%20chock%20full%20of%20delicious%20looking%20and%20sounding%20recipes%20.%20.%20.%20that%20are%20not%20out%20of%20the%20reach%20of%20the%20ordinary%20cook%20.%20.%20.%20nor%20are%20they%20boring%20in%20the%20least.%3C/p%3E%3Cp%3ETake%20this%20beautiful%20Macaroni%20Peas%20recipe.%20Not%20only%20is%20it%20beautiful%20to%20look%20at,%20but%20I%20can%20tell%20you%20it's%20incredibly%20tasty%20as%20well!%20And%20.%20.%20.%20it%20was%20very%20quick%20and%20easy%20to%20make.%20Todd%20balked%20a%20tiny%20bit%20when%20he%20saw%20it%20.%20.%20.%20he%20is%20one%20of%20these%20men%20who%20always%20thought%20vegetarian%20food%20was%20quite%20yukky%20and%20well,%20we%20all%20know%20how%20much%20he%20loves%20pasta!%20Well,%20he%20ate%20a%20whole%20big%20bowl%20of%20it%20and%20went%20back%20for%20seconds.%20'Nuff%20said.%3C/p%3E%3Cp%3EIf%20you%20really%20wanted%20to%20you%20could%20add%20some%20chopped%20ham%20or%20cooked%20bacon%20to%20the%20mix%20.%20.%20.%20it%20certainly%20would%20taste%20quite%20right%20here%20.%20.%20.%20but%20really,%20this%20is%20pretty%20darn%20good%20all%20on%20it's%20own.%3C/p%3E%3Cp%3E(And%20this%20is%20coming%20from%20a%20gal%20who%20hated%20peas%20at%20one%20time!)%20Oh%20so%20scrummy,%20this%20is%20.%20.%20.%20oh%20so%20scrummy!%3C/p%3E%3Cp%3E*Macaroni%20Peas*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3E(Adapted%20from%20River%20Cottage%20Veg%20Everyday)%3C/p%3E%3Cp%3EThis%20is%20fantastic.%20You%20can%20keep%20it%20veggie%20of%20course,%20but%20if%20you%20wanted%20a%20bit%20of%20meat%20some%20chopped%20boiled%20ham%20or%20crispy%20pancetta%20would%20not%20go%20amiss!%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20lightly%20salted%20water%20to%20the%20boil.%20Add%20the%20pasta%20and%20cook%20according%20to%20the%20package%20directions%20while%20you%20make%20the%20sauce.%3C/p%3E%3Cp%3EHeat%20the%20butter%20in%20a%20small%20pan.%20Add%20the%20garlic%20and%20cook%20gently%20for%20a%20few%20minutes%20without%20colouring.%3C/p%3E%3Cp%3EPut%20the%20peas%20in%20a%20separate%20pan,%20cover%20with%20water,%20bring%20to%20the%20boil%20and%20simmer%20until%20just%20tender.%20This%20should%20only%20take%20a%20couple%20of%20minutes.%20Drain,%20reserving%20the%20cooking%20liquid.%20Put%20half%20of%20the%20peas%20into%20a%20blender%20along%20with%206%20TBS%20of%20the%20cooking%20water,%20and%20the%20melted%20butter%20and%20garlic.%20Add%20the%20cheese.%20Blitz%20until%20you%20have%20a%20smooth%20and%20loose%20puree,%20adding%20a%20bit%20more%20of%20the%20pea%20cooking%20water%20if%20needed.%20Combine%20with%20the%20whole%20peas%20and%20season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EDrain%20the%20pasta%20as%20soon%20as%20it%20is%20ready%20and%20toss%20immediately%20with%20the%20hot%20pea%20sauce.%20Serve%20topped%20with%20a%20hearty%20grinding%20of%20black%20pepper,%20some%20more%20grated%20Parmesan%20and%20a%20garnish%20of%20chopped%20flat%20leaf%20parsley.%3C/p%3E%3Cp%3EThis%20book%20gets%20a%20hearty%2010%20out%20of%2010%20from%20me!!%20I%20have%20flagged%20almost%20every%20recipe!%20Well%20done%20Hugh!%20(I%20am%20really%20liking%20the%20shorter%20hair%20on%20Hugh%20too!)%3C/p%3E%3Cp%3EI've%20got%20a%20Lemon%20Basil%20Mayonnaise%20going%20over%20in%20The%20Cottage%20today!%3C/p%3E){kind=link}
