This is soooo easy it's barely a recpie!

I was cooking for a friend on a strict diet & was trying to give her a flavorful dish without setting her diet back.

This is what happened.

  • 2 limes
  • 1 clove of garlic
  • ~Chili oil, enough to coat the skillet~~~ See below
  • Salt & Pepper to taste
  • You can buy chili oil in an Asian market ( I like ◦Fruitful Island, be sure it is the CLEAR OIL, not a paste or sauce.

Directions

  1. Juice 2 limes,
  2. Crush the Garlic & 1/2 tsp lime zest, add to lime juice
  3. Put Tilapia Filets into a zip lock bag
  4. Add the lime & garlic.
  5. Marinade for 10 - 30 min
  6. Heat a heavy skillet & spray with non stick spray.
  7. After skillet is hot add the chili oil
  8. Remove the Tilapia from the bag ~ lightly saly & place in skillet
  9. Cook over medium high heat for 2 to 3 minutes, flip with the spatula
  10. Pour a small amount of the lime juice over the fish (be careful of the splatter)
  11. Continue to cook another 2 to 3 minutes, until the fish is opaque.
  12. Let the fish rest for a couple of minutes before plating.
  13. Bed atop any number of choices. It was great on Butter Lettuce!
