%3C/p%3E%3Cp%3EThis%20month,%20I%20was%20assigned%20Jamie%20at%20Thrifty%20Veggie%20Mama.%20%20%20Jamie%20focuses%20on%20eating%20healthy%20and%20vegetarian.%20%20%20%20%20%20Jamie%20states:%3C/p%3E%3Cp%3EWe%20really%20have%20seen%20health%20benefits%20from%20our%20vegetarian%20diets.%20%20We%20get%20sick%20far%20less%20often,%20my%20husband%20lost%20weight,%20and%20we%20feel%20more%20energetic.%20%20Eating%20healthy%20most%20of%20the%20time%20gives%20us%20room%20for%20some%20tasty%20treats%20too!%3C/p%3E%3Cp%3EI%20immediately%20went%20to%20the%20soup%20section.%20%20%20It%20is%20January,%20by%20golly!%20%20%20%20And,%20I%20needed%20some%20recipes%20to%20use%20up%20our%20surplus%20of%20beets%20from%20the%20hoop%20house.%20%20%20%20I%20found%20a%20delicious%20sounding%20Roasted%20Beet%20and%20Garlic%20Soup.%20%20%20Jamie%20says%20this%20is%20a%20%E2%80%9CA%20vegan%20soup%20with%20a%20smooth,%20velvet-like%20texture%20and%20beautiful,%20rich%20color.%E2%80%9D%20%20%20I%20was%20sold!%3C/p%3E%3Cp%3EI%20also%20wanted%20to%20use%20the%20carrots%20that%20we%20are%20still%20pulling%20from%20the%20garden.%3C/p%3E%3Cp%3EAll%20of%20these%20root%20veggies%E2%80%94beets,%20carrots,%20and%20radish%E2%80%94were%20pulled%20on%20January%203%20from%20our%20hoop%20house.%3C/p%3E%3Cp%3EYou%20know,%20I%20really%20didn%E2%80%99t%20care%20for%20beets%20until%20this%20fall%20and%20winter.%20%20%20It%20is%20amazing%20what%20growing%20your%20own%20food%20can%20do%20for%20your%20taste%20buds.%3C/p%3E%3Cp%3ERecent%20beet%20harvest%20for%20this%20soup.%3C/p%3E%3Cp%3ERoasted%20Beet,%20Carrot%20and%20Garlic%20Cream%20Soup%3C/p%3E%3Cp%3ESlightly%20adapted%20from%20Thrifty%20Veggie%20Mama%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3ERub%20the%20beets%20%20with%20olive%20oil%20and%20place%20in%20a%20glass%20baking%20pan.%20%20%20Season%20with%20salt%20and%20pepper%20and%20cover%20pan%20tightly%20with%20foil.%20%20%20Cut%20the%20top%20off%20the%20head%20of%20garlic%20and%20place%20it%20on%20a%20foil%20square%20and%20drizzle%20with%20olive%20oil%20and%20sprinkle%20with%20salt%20and%20pepper.%20%20%20Wrap%20up%20tightly%20in%20the%20foil.%20%20%20%20%20In%20another%20pan,%20drizzle%20the%20carrots%20with%20a%20bit%20of%20olive%20oil%20and%20salt%20and%20pepper.%20%20%20%20Do%20not%20cover%20the%20carrots.%3C/p%3E%3Cp%3ERoast%20the%20carrots%20for%20about%2020%20minutes,%20the%20garlic%20for%20about%2030%20minutes%20and%20the%20beets%20for%20about%20an%20hour.%20%20%20%20If%20you%20are%20using%20smaller%20beets,%20try%20for%2045%20minutes.%20%20%20Have%20timers%20on%20the%20ready!%3C/p%3E%3Cp%3ESet%20aside%20to%20cool.%3C/p%3E%3Cp%3EOnce%20the%20veggies%20are%20cool%20peel%20and%20quarter%20the%20beets%20and%20slice%20the%20carrots.%20%20%20Squeeze%20the%20roasted%20cloves%20out%20of%20the%20garlic.%3C/p%3E%3Cp%3EAdd%20the%20beets,%20garlic,%20broth,%20thyme%20in%20a%20medium%20soup%20pot.%20%20%20Salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EBring%20to%20a%20boil%20and%20then%20reduce%20to%20simmer.%20%20%20Cook%20about%2010-15%20minutes.%3C/p%3E%3Cp%3EAdd%20cream%20and%20puree%20in%20blender%20or%20using%20the%20immersion%20blender.%3C/p%3E%3Cp%3EReheat%20if%20necessary.%3C/p%3E%3Cp%3EI%20wish%20you%20could%20really%20see%20the%20color%20of%20this%20soup.%20It%20is%20beautiful!%3C/p%3E%3Cp%3EWhen%20I%20told%20The%20Hubs%20that%20I%20was%20making%20beet%20soup,%20he%20did%20wrinkle%20his%20nose.%20%20%20%20But,%20we%20both%20enjoyed%20this.%20%20%20%20%20I%20omitted%20the%20leeks%20from%20the%20original%20recipe%20for%20one%20reason:%20%20%20I%20didn%E2%80%99t%20have%20any%20growing%20in%20the%20hoop%20house!%3C/p%3E%3Cp%3EThis%20is%20delicious%20and%20would%20have%20been%20perfect%20with%20a%20grilled%20cheese%20sandwich,%20just%20like%20tomato%20soup.%3C/p%3E){kind=link}
