Potato Corn Chowder by NelskiI got this recipe from the Taste of Home Comfort Food Diet Cookbook. I wasn't sure how it would turn out using tofu and soy milk to thicken and cream it up, but it turned out great. I really like this soup and will be making it again. The recipe is only for 2 servings so I will double or triple next time for leftovers. |

Potato & peas dry curry by Saru"This is usually made as a gravy curry, but I like to make it dry too. It tastes as good and goes well with Roti, naan or just plain rice. Not many ingredients go into this dish yet this is full of flavour and very satisfying." |

I like them either with butter and sour cream or butter and milk in them both are delicious. But, if you don't have milk or sour cream on hand you can substitute 1/4 cup real mayo, still taste great. |

Potatoes, Fried Home Style by Dave McFarlandThis recipe is similar to the way my Father would cook potatoes on a Sunday morning. I added the Bell Peppers. If it was good weather, we would cook outdoors on our open fireplace. The wood smoke would add a great flavor, as it does to everything. Bacon, eggs, and pancakes were awesome, when cooked outdoors. A pot of coffee,… |
