Herbed Scalloped Tomatoes Recipe

Ingredients
- 4 c. skinned, fresh tomatoes or possibly canned
- 2 1/2 c. herb stuffing mix, divided
- 1 sm. onion, minced
- 1/2 teaspoon salt (optional)
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/4 c. butter
- 2 tbsp. sugar
Directions
- In buttered 2 qt casserole (or possibly use Pam), mix tomatoes and 2 c. stuffing mix. Stir in remaining ingredients, reserving 1/2 c. stuffing mix. Sprinkle reserved stuffing mix on top. Bake at 375 degrees, uncovered for 45 min.
