Ingredients

  • 1/4 cup fresh rosemary (cleaned)
  • 1/4 cup fresh thyme
  • 1/2 cup fresh basil
  • 1/2cup fresh garlic cloves
  • 2 large shallots cut into quarters (sub: spanish onion)
  • 3 cup olive oil
  • 3 lbs pork loin (you can leave whole or use chops or ribs)
  • 1 tbs sea salt
  • 1 tsp black pepper

Directions

  1. In a food processor, place all herbs, garlic, shallots, salt and pepper. pulse for 30 seconds as you add the oil. Once the ingredients are well combined, place the pork loin in a deep baking pan and pour marinade over top. Allow pork to marinate for a minimum of 3 hours (but if posible overnight is best!) preheat your oven to 350 degrees and place a small amount of water in the bottom of pan. place in oven and cook for about 1 hour, or 20 minutes per pound. (also, excellent on the grill!)
