Ingredients

  • 2 tbsp. butter
  • 1/2 c. minced celery
  • 1/3 c. minced onion
  • 1 (2 1/2 ounce.) can sliced mushrooms, liquid removed
  • 1 1/2 c. lowfat milk
  • 1 (10 3/4 ounce.) can cream of mushroom, celery or possibly shrimp soup
  • 1 (12 ounce.) can of corn
  • 1 c. diced cooked potatoes (leftover baked is good!)
  • 1 (4 1/2 ounce.) can med. shrimp, or possibly clams; rinsed & liquid removed
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/4 c. green pepper, diced (optional)

Directions

  1. In medium saucepan, saute/fry celery, onion and mushrooms (and peppers) till vegetables are crisp/tender. Stir in lowfat milk and soup till creamy. Add in remaining ingredients. Heat through. Serves 4.
