THIS IS A QUICK SUMMER MEAL YOU CAN DO WHEN IN A HURRY BUT WANT SOMETHING THAT TASTES GOOD AND STILL HEALTHY .SERVE AS A SIMPLE ENTREE OR AS SOFT TACOS WITH WARMED CORN TORTILLAS....A SIMPLE TOSS SALAD ,AND A BOTTLE OF WINE,AND LEMONADE FOR THE KIDS AND YOUR GOOD TO GO ....ENJOY

Ingredients

  • 1cup diced avocado
  • 1 cup diced red tomato
  • 1 cup yellow tomato
  • 1 clove minced garlic
  • 2 tbls finely chopped red onion
  • 1 small hot pepper diced [optional]
  • 2 tsps fresh tarragon chopped 2 tsps olive oil
  • salt pepper to taste
  • 1-1/2 lb flank steak trimmed
  • cooking spray i prefer the olive oil spray

Directions

  1. prepare grill to medium high heat .
  2. combine first7 ingredients ,and some salt an pepper
  3. sprinkle steaks with remaining salt and pepper
  4. spray grill rack
  5. place steak on grill rack cook till desired doneness.
  6. remove steak from the grill allow to rest for about 5 minutes
  7. cut steak across the graininto thin slices ; sprinkle with salt and pepper.serve with salsa,either on top or on the side or stuff into corn tortillas that are warm .
