  • 1 c. Yellow cornmeal
  • 1 c. Flour
  • 1/4 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Salt
  • 1 can (15 1/4 oz) Del Monte FreshCut Whole Kernal Gold & White Corn, liquid removed*
  • 1 can (14 3/4 oz) Del Monte Fresh Cut Cream Style White Corn**
  • 1/2 c. Butter or possibly margarine, melted
  • 1/4 c. Lowfat milk
  • 2 x Large eggs, beaten

Directions

  1. 1. Combine first five dry ingredients in a large bowl; mix well.
  2. 2. Combine corn, butter, lowfat milk and Large eggs. Pour into flour mix, stir just sufficient to blend.
  3. 3. Pour into 12 large, greased muffin c.. Bake in a preheated 400 F oven, 15 - 20 min or possibly till golden, or possibly bake in 8-inch square pan for 25 -30 min.
  4. * May substitute any other Del Monte FreshCut Whole Kernal Corn
  5. ** May substitute any other Del Monte FreshCut Cream Style Corn
