Ingredients

  • 8 slc bacon -- cut up
  • 2 x jalapeno chiles -- *
  • 2 clv garlic -- finely minced
  • 1 c. onion, minced -- 1 lg.
  • 1/4 c. beer -- any brand
  • 1 Tbsp. vinegar red chiles, grnd to taste
  • 32 ounce pinto beans, liquid removed 2 cn
  • 6 ounce tomato paste -- 1 cn

Directions

  1. * Jalapeno Chiles should be seeded and minced. Heat the oven to 375 degrees F. Cook the bacon in a 10-inch skillet till crisp then stir in the jalapeno chiles, garlic and onion. Cook and stir till the onion is tender then drain the excess fat. Mix the bacon mix and remaining ingredients in an ungreased 2-qt casserole. Bake uncovered, stirring once, till the beans are warm and bubbly, about 45 min.
