Ingredients

  • 1 1/2 lb Fresh shelled peas (or possibly 3 ten-oz boxes frzn peas)
  • 4 Tbsp. Unsalted butter - (1/2 stick)
  • 1 x Onion finely chopped
  • 2 x Tart apples, such as Rome or possibly Macintosh peeled, quartered

Directions

  1. Steam the peas in a vegetable steamer over simmering water for about 6 to 8 min till they are tender (less if using frzn peas).
  2. In a medium skillet, heat the butter. Add in the onion and apples and saute/fry over medium-high heat till very tender, about 8 min.
  3. Combine peas, onion, and apples in a food processor and puree till smooth. Return puree to saucepan and rewarm over very low heat.
  4. This recipe yields 10 servings.
