Easy Stuffed Chicken Breasts with Ham and Herb Garlic Cheese Spread Recipe

Ingredients

  • 4 small skinless, boneless chicken breasts
  • 4 thin slices deli ham
  • 1/2 cup Herb Garlic Boursin or Alouette, divided
  • 4 slices white cheese, such as provolone
  • salt and pepper to taste
  • garnish: paprika

Directions

  1. Using a kitchen mallet, pound the breasts until thin and rollable.
  2. Lay a piece of ham on eash breast, spread a tbs. of garlic herb spread on top of the ham.
  3. Roll up the breasts and secure with toothpicks, if needed.
  4. Sprinkle on salt and pepper ( I use seasoned salt).
  5. Cover and bake at 350 F for 35-40 minutes.
  6. Remove breasts from the oven and place a slice of cheese on each, and sprinkle with a bit of paprika, re-cover.
  7. Plate the breasts after 5 minutes or so, and stir the rest of the garlic cheese into the pan juices, mix well and use on top of the breasts, or with whatever starch you've prepared, e.g. mashed potatoes.
