  • 1 pkt 2-layer-size yellow cake mix
  • 1/4 tsp Orange extract
  • 1 1/2 c. Sugar
  • 1/4 tsp Cream of tartar
  • 1/2 c. Water ds Salt
  • 3 x Egg whites
  • 1 tsp Vanilla
  • 1/2 c. Crumbled soft coconut macaroons (3 cookies)
  • 1/2 c. Minced pecans
  • 1/2 c. Minced, liquid removed, marachino cherries

Directions

  1. Prepare cake mix according to package directions EXCEPT add in orange extract.
  2. Divide batter into three greased and floured 9" round baking pans. Bake at 350 F 14-16 min. Cold 10 min, remove layers from pans. Cold on racks Mix sugar, cream of tartar,water and salt. Bring to boiling, stir till sugar is dissolved. SLOWLY add in sugar to egg whites, beat with electric mixer till stiff peaks form, about 7 min. Beat in vanilla. To 2 c. of frosting add in remaining ingredients. Spread first layer of cake with half of the fruit frosting, cover with second layer. Spread with remaining fruit mix. Top with third layer. Frost entire cake with remaining plain frosting.
