Easy Chocolate Brownie and Peanut Butter Cupcakes Recipe
Use a good quality brownie mix. Hershey's make one with the chocolate chips already in it.
Ingredients
- 1 box brownie mix (for 8-9" pan)
- 1/2 cup mini chocolate chips
- 1/3 cup peanut butter
- 3 tbs. cream cheese
- 1 beaten egg
- 1/4 cup sugar
- optional: chocolate or peanut butter frosting
Directions
- Heaqt oven to 350 degrees
- Make brownie batter according to directions, add chips.
- In a seperate bowl, mix peeanut butter, with soft cream cheese, egg, and sugar.
- Pour muffin cups 1/3 full, drop in a spoonful of peanut butter mix into each cup, cover with the rest of the batter.
- Bake 15-20 minutes. Use a toothpick to test the center of a muffin, which should come out clean.
- Let cool and frost, or sprinkle on powdered sugar.
