Curry Rice Salad with Artichokes for Food ‘n Flix Recipe
Ingredients
- Curry Rice Salad with Artichokes
- loosely based on Cold Rice Salad from San Francisco a La Carte (The Junior League of San Francisco, 1979)
- 1 3/4 c. chicken stock
- 1 c. long grain and wild rice mix
- 1 (12 oz.) jar marinated artichokes (quartered)
- 4 green onions, chopped
- 1/4 c. roasted red peppers, chopped
- 1/4 c. marinated olives, chopped or sliced.
- 1/8 c. fresh flat Italian parsley, chopped
- 1/2 t. curry powder
- 1 c. mayonnaise
- Salt and fresh ground pepper, to taste

%3C/p%3E%3Cp%3EThere%20was%20little%20or%20no%20time%20to%20watch%20this%20month%E2%80%99s%20feature%20for%20Food%20%E2%80%98n%20Flix:%20%20The%20Jane%20Austen%20Book%20Club.%20%20I%20was%20prepared%20to%20write%20an%20apologetic%20note%20to%20Kimberly%20(the%20host%20this%20month)%20to%20say%20I%20would%20sit%20out%20this%20round.%20%20%20(Her%20announcement%20post%20can%20be%20found%20here.)%3C/p%3E%3Cp%3EI%20finally%20found%20a%20bit%20of%20time%20on%20December%2019%20to%20watch%20the%20movie%20before%20making%20a%20couple%20of%20holiday%20parties%20that%20afternoon%20and%20evening.%20%20(Goodness%20knows%20that%20after%20December%2021,%20my%20life%20was%20going%20to%20be%20jammed%20packed%20with%20travel,%20family%20and%20friends.%3C/p%3E%3Cp%3EI%20was%20so%20glad%20I%20found%20the%20time.%3C/p%3E%3Cp%3EHaving%20read%20a%20few%20reviews%20of%20the%20film,%20I%20was%20prepared%20for%20the%20typical%20chick%20flick.%20%20%20Don%E2%80%99t%20get%20me%20wrong,%20this%20movie%20is%20definitely%20of%20that%20genre,%20but%20I%20truly%20enjoyed%20this%20one.%3C/p%3E%3Cp%3EYes,%20there%20were%20lots%20of%20characters%20that%20could%20have%20been%20developed.%20%20I%20would%20have%20loved%20to%20have%20seen%20more%20of%20Lynn%20Redgrave%E2%80%99s%20whacked%20out%20hippie%20mother.%20%20Maybe%20we%20could%20have%20figured%20out%20why%20Prudie%20was%20such%20a%20whiner.%20%20%20Really,%20I%20loved%20all%20the%20characters%20but%20I%20wanted%20to%20slap%20her.%20%20I%20have%20no%20patience%20for%20high%20school%20teachers%20who%20even%20entertain%20thoughts%20about%20dalliances%20with%20their%20students.%20%20%20%20And,%20could%20she%20have%20spouted%20off%20any%20more%20pretentious%20French%20comments?%3C/p%3E%3Cp%3EJust%20to%20round%20out%20the%20other%20more%20likable%20characters%20there%20are%20the%20following%20members%20of%20the%20club:%3C/p%3E%3Cp%3EJocelyn:%20%20Her%20grief%20over%20a%20companion%E2%80%99s%20death%20is%20the%20catalyst%20for%20the%20forming%20of%20this%20club.%20%20I%20coveted%20her%20entire%20wardrobe.%20%20%20Where%20can%20I%20buy%20that%20blanket%20coat%20she%20was%20wearing?%20%20Even%20though%20it%20was%20obvious%20what%20couple%20would%20be%20formed%20from%20the%20book%20club%20from%20the%20beginning%20of%20the%20film,%20I%20was%20still%20rooting%20for%20her%20and%20Grigg.%3C/p%3E%3Cp%3EBernadette:%20%20By%20the%20end%20of%20the%20film,%20she%20will%20be%20on%20her%20seventh%20marriage.%20%20%20Bernadette%20is%20the%20backbone%20of%20the%20club%20and%20serves%20as%20a%20matriarchal%20figure.%3C/p%3E%3Cp%3ESylvia:%20%20This%20club%20helps%20her%20deal%20with%20the%20divorce%20from%20the%20super%20hot%20(and%20soon%20remorseful)%20Jimmy%20Smits.%3C/p%3E%3Cp%3EAllegra:%20%20Sylvia%E2%80%99s%20daughter%20who%20soon%20moves%20in%20with%20her%20mother%20to%20watch%20over%20her%20after%20the%20divorce.%20%20Allegra%20struggles%20with%20her%20own%20relationships%20as%20well%20but%20isn%E2%80%99t%20afraid%20of%20taking%20on%20physical%20challenges%20(and%20risks).%3C/p%3E%3Cp%3EGrigg:%20%20He%20is%20the%20token%20male%20of%20the%20group%20and%20he%20and%20Prudie%20are%20the%20only%20ones%20that%20didn%E2%80%99t%20have%20prior%20relationships%20with%20the%20other%20members%20of%20the%20club.%3C/p%3E%3Cp%3EDoes%20anyone%20know%20where%20I%20can%20get%20Jocelyn%E2%80%99s%20coat?%20I%20love%20it!%3C/p%3E%3Cp%3EAlthough%20there%E2%80%99s%20not%20a%20plethora%20of%20food%20in%20the%20film,%20we%20are%20given%20a%20lot%20of%20glimpses.%3C/p%3E%3Cp%3EWas%20that%20cheesecake%20I%20saw%20on%20the%20table%20at%20the%20Marmalade%20Cafe%20when%20Daniel%20breaks%20the%20news%20of%20his%20infidelity%20to%20Sylvia?%3C/p%3E%3Cp%3EThose%20were%20some%20huge%20ice%20cream%20sundaes%20(with%20lots%20of%20extra%20whipped%20cream)%20that%20Bernadette%20and%20Prudie%20dive%20into%20on%20their%20first%20meeting.%3C/p%3E%3Cp%3ESylvia%20makes%20flan%20to%20keep%20the%20divorce%20blues%20away.%3C/p%3E%3Cp%3EI%20also%20saw%20beautiful%20crudites%20at%20Jocelyn%E2%80%99s,%20lots%20of%20salads%20and%20finger%20foods%20at%20the%20other%20club%20members%E2%80%99%20homes%20and%20at%20one%20point,%20Allegra%20is%20delighted%20by%20grilled%20artichokes.%20%20%20Then%20there%20is%20the%20final%20club%20meeting%20at%20the%20picnic%20on%20the%20beach.%3C/p%3E%3Cp%3EI%20was%20inspired%20to%20whipped%20something%20up%20that%20could%20work%20at%20a%20picnic%20or%20at%20a%20book%20club%20luncheon%20(and%20could%20be%20served%20to%20impromptu%20holiday%20guests.)%20%20This%20salad%20goes%20together%20very%20quickly.%3C/p%3E%3Cp%3EBring%20chicken%20stock%20to%20a%20boil,%20stir%20in%20rice%20and%20return%20to%20boil.%20%20%20Lower%20heat%20to%20simmer,%20cover%20and%20cook%2020-25%20minutes%20until%20all%20liquid%20is%20absorbed%20and%20rice%20is%20tender.%20%20Cool.%3C/p%3E%3Cp%3EDrain%20artichokes,%20reserving%20some%20of%20the%20marinade.%20%20Chop.%20%20%20Add%20to%20cooled%20rice.%3C/p%3E%3Cp%3EAdd%20green%20onions,%20red%20peppers,
