Directions

  1. Dressing:Combine all ingredients in a jar and shake well till well combined. Season well. Set aside.
  2. Cook rice in a large pot of boiling salted water till tender, about 30 min. Rinse under cool running water and allow to drain well.
  3. Slice spring onions.
  4. Dice celery and capsicum.
  5. Peel core and dice apples.
  6. Flake tuna into pcs, combine with rice and remaining salad ingredients, add in dressing and mix well.
  7. Serves 4.
