  • 1 lrg Onion, minced (1 c.)
  • 2 x Cloves garlic, minced
  • 1 tsp Curry pwdr Freshly grnd pepper to taste
  • 2 2/3 c. Water or possibly vegetable broth
  • 1 bn Broccoli (about 1 lb.), sliced
  • 1 x -(up to)
  • 2 lrg Potatoes, cut into cubes
  • 1 c. Fat-free soy lowfat milk
  • 1 dsh Nutmeg (optional)

Directions

  1. This is my favorite soup (at least it's the only soup where I lick the spoon clean!). And it's so easy! It's adapted from Jane Brody's Good Food Book.
  2. In a large, preferably nonstick, dutch oven type pot, saute/fry the onion and garlic in a bit of the water/broth. Add in the curry pwdr, pepper, and the rest of the water/broth and bring to a boil. Add in the broccoli and potato.
  3. When it returns to a boil, reduce heat and simmer for about 20 min till the broccoli and potatos are tender. Puree the soup and return it to the pot, add in the soy lowfat milk, and cook the soup over low heat till it's warm, but do not boil it. (In actuality, the only ingredient amounts which I stick to are the water/broth and the soy lowfat milk - you can vary the amount of onion, garlic, broccoli, potatos, and spices - I use a lot of garlic and curry). Enjoy!
