Border Benedicts by michelle perezThis amazing breakfast offers a terrific balance of carbs, protein, and fat. We skipped the traditional hollindaise in favor of fresh avocado and salsa. It's quick, easy and makes for a gorgeous presentation. Fantastico! |

Roasted Tomatillo Salsa by Cindy McNamaraI picked up a bunch of nice looking tomatillos at the local farmers market this week that were crying to be charred on the grill and made into a spicy salsa for me to can. It could be eaten fresh and would last a couple of weeks in the fridge. If you don't want so much heat, simply reduce the jalapeno quantity. |

A couple of days ago I posted a recipe for my green chili salsa, well I had a lot left over and rather than trowing a perfectly good sauce away I looked in refrigerator to see what or how to use it up, other than with chips. Slow cooker pork stew - chile verde by Nancy MiyasakiThis is an easy and tasty version of chile verde that I adapted from a slow cooker cookbook. This keeps very well for 3-4 days, and honestly tastes as good if not better reheated. You can also serve it inside tortillas as a taco or burrito for a second meal. Enjoy! |

Mango Chipotle Sauce/Glaze by Bob VincentThis is a good sauce/glaze for almost anything. It is easy to make and stores refrigerated well for several days or if air tight much longer. I use it on grilled fish, chicken or pork. It can be used hot as a finishing sauce or cold as a glaze during the last few minutes of grilling. Adjust the chipotle peppers to your taste. |

Tacos Al Carbon by John SpottiswoodThis is a simple steak taco recipe that emphasizes the flavor of the meat and the grill. You can spice it up by adding extra cumin or a little chili powder, jalapeno, or cayenne if you like, but it is delicious as is. Make sure to chop any additional fixings you like: I used cilantro, avocado and tomato...but they are quite tasty… |
