Cumin Rice by Joyce LeungThis rice is a delicious mix of cumin and cinnamon. It provides a nice, slightly sweet flavor, that is a perfect complement to any middle eastern dish. The only dishes I would avoid serving this with are sweet dishes with dates, figs, etc. I served it with my Braised Lamb with Beans. It was great! |

Recipes vary from family to family throughout Morocco and the rest of North Africa. I'm particularly fond of this version. If you have not had this before, you MUST try it. It is truly delicious! |

Lamb Meatball and Fava Bean Tagine / Morocco by Amos MillerThis is truly a hand-crafted meal - it takes time. I know that only the most devoted will make this. But it is nothing short of spectacular and was my favorite Spring dish. I'd eat it weekly. This is how I recall Mina made for me when I lived in Marrakech. I'm sharing it just because it is a personal favorite and, for guests,… |

Jamaican "Beef" Patties by Kiki ThompsonComing from a Jamaican background, many times my palate craves the blended flavors of curry. So I veganized one of my favorite treats, Jamaican Beef Patties. Beer marinated pork chops by Peter BrownWhen selecting pork chops for this dish make sure they are evenly sliced so that they are all ready at the same time. The chops should also have a good circle of fat because this adds to the flavour. To extract the best flavour from the marinade it is best to soak the meat overnight in a covered dish in the refrigerator, otherwise… |

Moroccan Split Pea Soup by John SpottiswoodThis is a delicious and beautiful recipe I adapted from one in Paula Wolfert's beautiful book "the food of morocco". The split pea soup has wonderful Moroccan flavors, and it gets a beautiful touch when you drizzle homemade pepper oil on top.
