I looked over a lot of Mexican flavored coleslaws and this is what I came up with...we wanted full flavor to go with our fish tacos and this fit the bill.

My pasta choice for this is ditalini, a small pasta often used in soups (this can be hard to locate but Barilla sells a one pound box.) For me, this has just the right balance of slaw to dressing. A true creamy slaw delight. Keep in mind this produces a VERY creamy version of coleslaw. To reduce the creaminess, simply add a bit more cabbage.
