Swai with Lemon-Basil Pesto by John SpottiswoodWe made this dish with Swai, but it would work equally well with basa, tilapia, catfish, sole, or any other mild and flaky white fish. The pesto is bright and citrusy and contrasts well with the mild, garlicky flavor of the fish. Our kids loved it and all went back for seconds. We served it with fresh artichoke and rice. |

Lemon Paprika Tilapia by John SpottiswoodThis is a delicious version of Tilapia that we adapted from a Bon Appetit recipe. We served it with the quinoa recipe linked below. It was a great combination. I put only a small amount of the sauce over the fish as the salt/pepper/paprika tilapia sauteed with a little butter is delicious all by itself! |

Shrimp Tacos by John SpottiswoodThese shrimp are easy to make and absolutely delicious. While I enjoy them in these tacos immensely, they would also be great served over rice with beans on the side. They simply melt in your mouth! |

Ham Burgers by Stephen CroutI like those ham steaks you get at the supermarket, the big ones with the little round bone. I like to grind them up and make burgers. The ham is quite salty, so I start with a 10-minute simmer in water, then cool down and put through my meat grinder. I suppose one could use a food processor, although the texture won't be as fine or… |
