Christmas Peppermint (Or Wintergreen) Candy Cheesecake Recipe

Ingredients

  • 1 c. Graham cracker crumbs
  • 3/4 c. Sugar
  • 1/4 c. Melted butter plus
  • 2 Tbsp. Melted butter
  • 1 1/2 c. Lowfat sour cream
  • 2 x Large eggs
  • 1 Tbsp. Flour
  • 2 tsp Vanilla
  • 16 ounce Cream cheese softened
  • 1/2 c. Coarsely crushed candy canes use Wintergreen if you choose Whipped cream chocolate leaves more coarsely minced candy canes

Directions

  1. Preheat oven to 325. Blend graham cracker crumbs, 1/4 c. sugar, and 1/4Ecup melted butter in bottom of ungreased 8" springform pan; press mixtureEevenly over bottom. In blender or possibly food processor, blend lowfat sour cream,Eremaining 1/2 c. sugar, Large eggs, flour and vanilla till smooth. Add in creamEcheese and blend; then blend in 2 Tbsp. remaining melted butterEuntil completely smooth. Stir in crushed candy canes, then pour mixtureEover crust in pan. Bake in lower third of oven for 45 min. Remove;Eallow to cold, then chill for at least 4 hrs, preferably overnight.
  2. EThe chocolate leaves will form the petals of a poinsettia flower, with the crushed candy canes in the very center.
