  1. Brown chicken parts and drain. Saute/fry onions, celery, and green pepper (you may add in raw, it will take longer to cook). Put chicken in a 6-qt pan with 1 to 1 1/2 qts water. Add in vegetables and sausage. Add in roux; cook till done.
