%20%C2%BD%20cup%20low%20sodium%20soy%20sauce%20(you%20can%20use%20gluten%20free%20soy%20sauce)%203%20tbsp%20brown%20sugar%20%C2%BD%20cup%20water%204-6%20tbsp%20canola%20oil.%3C/p%3E%3Cp%3ETrim%20the%20chicken%20legs%20and%20thighs%20well%20of%20excess%20fat%20and%20skin.%20I%20like%20to%20remove%20the%20backbone%20portion%20attached%20to%20the%20thighs%20for%20quicker%20and%20more%20even%20cooking%20as%20well.%20You%20can%20use%20all%20thighs%20or%20all%20drumsticks%20in%20this%20recipe%20if%20you%20prefer.%20Add%20the%20trimmed%20chicken%20pieces%20to%20a%20large%20ziplock%20bag.%20In%20a%20small%20bowl,%20whisk%20together%20all%20of%20the%20remaining%20ingredients%20EXCEPT%20the%20water%20and%20canola%20oil.%20Pour%20this%20marinade%20over%20the%20chicken%20in%20the%20bag%20and%20press%20out%20as%20much%20air%20as%20you%20can,%20Place%20the%20bag%20in%20a%20shallow%20pan%20and%20marinate%20in%20the%20fridge%20for%20up%20to%2024%20hours,%20turning%20the%20bag%20over%20in%20the%20dish%20several%20times%20while%20marinating.%20After%20marinating,%20transfer%20both%20the%20chicken%20and%20marinade,%20along%20with%20%C2%BD%20cup%20of%20water%20to%20a%20pot%20or%20skillet%20large%20enough%20to%20fit%20all%20the%20chicken%20pieces%20in%20a%20single%20layer.%20Simmer%20slowly%20for%2010%20minutes%20over%20medium%20low%20heat.%20Turn%20all%20of%20the%20chicken%20pieces%20over%20and%20simmer%20slowly%20for%20an%20additional%2010%20minutes.%20Remove%20the%20chicken%20pieces%20from%20the%20pan%20and%20continue%20to%20simmer%20the%20sauce%20for%20several%20minutes%20until%20it%20thickens%20slightly%20to%20a%20glaze.%20In%20the%20meantime%20heat%20enough%20canola%20oil%20to%20a%20large%20non-stick%20saut%C3%A9%20pan%20over%20medium%20low%20heat%20to%20cover%20the%20bottom.%20Don't%20worry,%20this%20oil%20really%20doesn't%20get%20absorbed%20by%20the%20chicken:%20if%20anything,%20it%20helps%20to%20render%20additional%20fat%20from%20the%20skin%20of%20the%20chicken.%20You%20want%20to%20control%20the%20heat%20carefully%20here,%20it%20should%20be%20only%20high%20enough%20so%20that%20the%20chicken%20does%20sizzle%20slowly%20in%20the%20pan%20but%20not%20so%20high%20as%20it%20will%20burn%20the%20glaze%20that's%20left%20on%20the%20partially%20cooked%20chicken.%20Fry%20for%20about%205%20minutes%20per%20side%20on%20the%20thighs%20and%20make%20about%203%20or%204%20turns%20on%20the%20chicken%20drumsticks%20to%20make%20sure%20the%20skin%20gets%20crisped%20on%20all%20sides.%2010%20minutes%20total%20frying%20time%20should%20be%20fine.%20Remove%20the%20chicken%20from%20the%20pan%20and%20serve%20with%20plain%20rice.%20The%20sauce%20can%20be%20drizzled%20over%20the%20chicken%20and%20rice%20when%20serving.%20%203.4.3177%3C/p%3E){kind=link}
