  • 1 lrg Apple, peeled and quartered
  • 1 lrg Celeriac, peeled and quartered
  • 1 lrg Potato, peeled and quartered
  • 3 Tbsp. Double cream
  • 1 ounce Unsalted butter Salt and grnd black pepper

Directions

  1. Boil the celeriac and potatoes in salted water till tender. In a separate saucepan, reduce the apple with a little water to a lumpy consistency.
  2. Drain the celeriac and potatoes and mix with the apple. Pass through a vegetable moule and add in the cream, butter and seasoning.
