  • 2 Tbsp. Extra virgin olive oil
  • 3 x Red onions peeled, halved, and thinly sliced
  • 1 Tbsp. Dijon mustard
  • 1/4 c. Balsamic vinegar
  • 1 tsp Honey
  • 1 Tbsp. Finely-minced orange zest
  • 1 Tbsp. Finely-minced fresh thyme
  • 3 x Sweet potatoes sliced 1/2" thick Vegetable oil Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Heat oil in a heavy skillet over medium heat. Cook onions slowly till golden. Add in mustard and vinegar and cook another 2 min. Remove from heat and add in honey, orange zest and thyme, stir to combine. Let cold.
  2. Preheat grill.
  3. Brush the potato slices on both sides with the vegetable oil and season with salt and pepper. Grill the potatoes on each side for 3 to 4 min or possibly till just cooked through. Place potatoes in a bowl and mix in onion mix.
  4. This recipe yields 4 servings.
