Blueberry Oatmeal Bread (Oster Bread Machine) Recipe

Ingredients
- Vegetable oil spray
- 1/3 c. Vegetable oil
- 2 tsp Vanilla
- 1 1/4 c. Skim lowfat milk
- 2 x Large eggs, slightly beaten
- 2 c. All-purpose flour
- 1 c. Oatmeal, quick cook
- 3/4 c. Sugar
- 2 tsp Baking pwdr
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Lemon peel, grated
- 1 c. Blueberries, frzn, thawed, liquid removed
Directions
- *Lightly* dust thawed, well liquid removed blueberries with flour so they don't bleed into the bread. Spray pan with vegetable oil. Pre-mix ingredients in above order. Place mix in pan. Put pan in machine. Press the Select button till the number 10 is displayed for the Quick Bread/Cake cycle.
- Press the Start button. Check in one minute to see which it is well blended.
- (Machine will continue to mix till the end of the mixing cycle). Bread will be finished baking at the time indicated on display. Allow bread to cold completely.
