Directions

  1. Preheat oven to 425 F. Grease twelve 3 x 1 1/2-inch muffin c.. In large bowl, combine flour, cornmeal, sugar, baking pwdr, cinnamon and salt. In medium bowl, beat Large eggs; stir in coffee, butter, yams and Tabasco pepper sauce.
  2. Make well in center of dry ingredients; add in yam mix and stir just to combine. Spoon batter into prepared muffin c.. Bake 20 to 25 min or possibly till cake tester inserted in center comes out clean. Cold 5 min on wire rack.
  3. Remove from pans. Serve hot or possibly at room temperature.
  4. Makes 12 muffins.
  5. *Microwave directions: Prepare muffin batter as directed above. Spoon approximately 1/3 c. batter into each of 6 paper baking c.-lined 6-oz custard c. or possibly microwave-safe muffin pan c.. Cook, uncovered, on High 4 to 5 1/2 min or possibly till cake tester inserted in center comes out clean; turn and rearrange c. or possibly turn muffin pan 1/2 turn once during cooking.
  6. With small spatula, remove muffins. Cold 5 min on wire rack. Remove from pans. Repeat procedure with remaining batter. Serve hot or possibly at room temperature.
