This is a very nice salad rich of very fresh flavors and simple to prepare ..

Ingredients

  • 4 fresh medium artichokes
  • 4 Oz Speck in one slice of 1/4 of inch thick
  • 10 leaves of Frisee' lattuce
  • 2 Oz Pecorino Toscano shaves
  • 1 Tbs shaved almond toasted
  • 1/2 Tsp Rose Pepper Corn crushed
  • Salt to season
  • 2 Tbs Very Good Italian Extra Virgin Olive Oil ( Laudemio Frescobaldi is the best for this salad)
  • 1 Chestnut Honey
  • 1 Tsp Balsamic Vinegar

Directions

  1. Clean the Artichokes , cut in half and take out the little beard from the inside, cut them julienne ( thin cut) set them in a bowl of iced water mixed with the juice of half lemon so they stay fresh and white..
  2. Julienne ( cut thin) the speck and set aside;
  3. Wash well th frisee' leaves and set aside;
  4. Toast the almonds in a small no sticky pan until they reach a nice golden color set aside;
  5. Into a little bowl prepare the dressing with the honey, the extra virgin olive oil, the balsamic vinegar a little pinch of salt whisk well until smooth and emulsionated ;
  6. to compose the salad :
  7. dry well the Artichokes and the Frisee' set them Into a medium large bowl , add the rose pepper corn crushed and the dressing if necessary add a little pinch of salt, toss well ..
  8. Once well seasoned set the salad in two plates and garnish with the shaved pecorino toscano, the julienned speck, the shaved toasted almonds, drizzle with a little of extra virgin olive oil and Buon Appetito..
