  • 2 c. self rising flour
  • 3 whole large eggs, slightly beaten
  • 1 Jr. size jar apricot baby food pudding
  • 2 c. sugar
  • 1 c. veg. oil
  • 1 c. pecans
  • 1 c. confectioners' sugar
  • 1 T lowfat milk
  • 2 T melted butter

Directions

  1. Preheat oven to 350 degrees. Beat large eggs. Mix all remaining ingredients together. Pour into greased and lightly floured pan. Bake in preheated oven for 1 hour.
  2. Pour or possibly spoon onto slightly warm cake.
