Crustless Zucchini PieI use the term “pie” liberally in this recipe. This is not really a pie per say. I did start out thinking I would put this delicious zucchini mixture in a crust, but when it came right down to it, I just couldn’t. I wanted the fresh taste of the vegetables to be the star of the show! |

Oven Roasted ZucchiniI love zucchini. I could eat it every day and often do in the summer. Nothing better than a big plate of zucchini for dinner. This recipe is easy and delicious and brings out a slight sweetness to the zucchini. |

Cranberry Grits CasseroleThis slightly sweet casserole would make a great Holiday weekend breakfast side with leftover ham or some freshly cooked bacon! I topped mine with a little butter and real bacon bits but the vegetarians in the family ate it straight up! |

Cabbage Artichoke CasseroleI have been trying to think “meatless”. It’s not easy for a gal cooking for a Carolina good ole boy, but as a cabbage lover this got his nod of approval anyway! So hopefully you, too, will enjoy this, the last of my casserole / crock pot recipes this month! |

Egg and Grit CasseroleThis is a satisfying egg recipe using a Southern favorite – grits! Serve with a meat or vegetable as a meal or put on your breakfast buffet. I served with a family favorite – shrimp. |

Sweet ROASTED TOMATO simplicityI splurged on some cheaply priced Roma TOMATOES and... simply roasted them until they gave me the sweetness I deserve. |
