You know what a fan I am of veggies and cheese so this salad rocked my world. I didn't have an issue finding Haloumi in the artisan cheese section of my grocery store, but it was expensive. I did notice a few other options called "grilling cheese" that were less expensive I might try next time. It also reminded me a lot of cheeseā€¦

I made these carrots to be a sweet, vegetable side to go with the Caribbean Pork we made tonight. I wanted something that would be sweet like plantains, and these did the job perfectly. I adapted this from a Cook's Illustrated recipe, and I think the technique is a good one. They'd be nice as a a side with any grilled meat.
