You know what a fan I am of veggies and cheese so this salad rocked my world.

I didn't have an issue finding Haloumi in the artisan cheese section of my grocery store, but it was expensive. I did notice a few other options called "grilling cheese" that were less expensive I might try next time. It also reminded me a lot of cheese curds, so I think you could substitute those easily. They also don't melt easily and would stand up to the frying.

I loved the salty haloumi cheese combine with the fresh arugula and juicy roma tomatoes. This is a classic salad that makes me dream of a summer evening meal in a seaside restaurant in Greece. Now can someone please pass the Calamari?
