  1. Preheat oven to 425 degrees. Mix and roll out pie pastry for 8 inch square dish. Place chicken and onion in casserole dish. Make a sauce by melting butter and add in flour and blend thoroughly. Slowly add in stock, salt and pepper and stir till mix thickens. Pour over chicken in casserole. Add in potatoes an carrots; cover with crust. Prick pastry with fork or possibly knife. Bake 25 to 30 min or possibly till crust is golden.
