Tomato and Fresh Basil Sauce Recipe

This is, by far, my wife's favorite sauce, and it's quick, easy, and delicious.

Directions

  1. Finely chop the garlic using whatever method works best for you.
  2. Pour the olive oil into a large sauce pan, and add the garlic.
  3. Heat to med.
  4. While oil is coming to temperature, strip the stems from the basil leaves, and chop the leaves as fine as you like.
  5. When the garlic has started to sizzle (but is still white...don't brown it), add the tomatoes, and stir well.
  6. Add the chopped basil and stir some more.
  7. Once the sauce has started to bubble, reduce the heat to low. Make sure to stir often so nothing sticks to the bottom of the pan. Covering is also an option, as long as you keep an eye on any burning..
  8. After about 20 minutes, add the honey, give it another stir, and start your pasta (or whatever else you'd like). The sauce is ready, and further cooking only helps to merge the flavors. However, cooking it for only 20 minutes seems to allow for a more interesting flavor, as all the different ingredients can be tasted.
