  • 1 jar chargrilled artichokes
  • 1/2 x Red onion, finely sliced
  • 3 Tbsp. Chives, minced
  • 6 x Basil leaves
  • 1 tsp Caster sugar
  • 2 Tbsp. Red wine vinegar
  • 1 tsp Dijon mustard
  •     Salt
  •     Pepper
  • 5 lrg Plum tomatoes, seeded and cut into rough chunks
  • 5 Tbsp. Creme fraiche

Directions

  1. Heat the sugar and vinegar in a pan. Put the tomatoes, red onion and artichoke in a bowl with some shredded basil leaves and stir together.
  2. Pour the vinegar mix into a separate bowl and add in 3tbsp creme fraiche and whisk together. Add in to this the mustard and chives, and season with salt and pepper. Stir well. This will form the salad dressing. Add in sufficient of the dressing to the tomatoes to bind everything together.
  3. Serve in a bowl with some radicchio leaves and chives as garnish.
