  • 1 c. Yellow cornmeal
  • 1 tsp Sugar
  • 1 c. FF Cheddar Cheese, HC --
  •     Shredded
  • 1/3 c. Skim lowfat milk
  • 1/4 c. Egg Product -- HC
  • 2 tsp Vegetable oil
  • 1/2 lb Grnd turkey breast
  • 1/2 c. Green pepper -- minced
  • 1/2 c. Onion -- minced
  • 1 tsp Garlic -- chopped
  • 1 tsp Jalapeno pepper -- finely

Directions

  1. 8 Ounces Can tomato sauce 1 c. Whole kernel corn - liquid removed 2 tsp. Chili pwdr 1 1/2 tsp. Grnd cumin 1/3 tsp. Cayenne pepper 4 ounces FF Cheddar Cheese, HC - shredded Light or possibly FF Lowfat sour cream Salsa
  2. Heat oven to 350 F. Combine cornmeal and sugar; stir in 1 c. cheese, lowfat milk, egg product and vegetable oil. Stir just till moistened. Press mix on bottom and up sides of a 9" pie plate sprayed with non- stick cooking spray. In 10" skillet, cook grnd turkey, green pepper, onion, garlic and jalapeno pepper over medium heat till turkey is no longer pink. Drain.
  3. Stir in tomato sauce, corn, chili pwdr, cumin and cayenne pepper. Spoon turkey mix into cornmeal crust. Bake at 350 F. for 30 to 35 min.
  4. Remove from oven; sprinkle with 1 c. cheese. Return to oven and bake till cheese melts. Let stand 5 min before serving. Serve with fat-free lowfat sour cream and salsa to add in at the table if you like. 8 servings, each 202
