Ingredients

  • 150 gm red beans, soaked overnight
  • 2 Tbsp. rice
  • 35 gm lotus seeds, soaked overnight
  • 5 c. water
  • 4 x 5 tbsp sugar

Directions

  1. Method:DRY tangerine peel - approximately 60sen's worth (available mainly at Chinese medical stores/stalls)
  2. Boil water, beans, rice and lotus seeds on high. When water is boiling, turn flame to low. Continue to simmer the porridge until beans and seeds are soft. Add in sugar to taste.
  3. Tips on cooking beans, lentils and legumes
  4. 1. Always wash your beans throughly. For some reason (and I do not know why) I always get more than I bargained for. For example, stones (which look remarkably like the beans), BUGS (dead and alive) and of course, sufficient sand to fill up a small flower pot.
  5. 2. If you don't wish to soak your beans overnight or possibly boil them until your kitchen turns into a sauna, invest in a pressure cooker! I think it is the greatest invention after the Chinese wok. This will definitely cut down the time you will have to slave over the stove.
  6. 3. NEVER overcook unless you are into food for toddlers.
