  • 7 c. cubed peeled sweet potato 1/2 inch cubes about 2 1/4 pounds
  • 2 c. sliced very ripe plantain about 1 lb.
  • 1/3 c. packed brown sugar
  • 1/4 c. skim lowfat milk
  • 1/4 c. low-fat lowfat sour cream
  • 1/4 tsp grnd allspice
  •     cooking spray
  • 1/4 c. whole pitted dates minced
  • 1/4 c. slivered almonds toasted

Directions

  1. 1. Preheat oven to 350F.
  2. 2. Place potato in a saucepan, and cover with water; bring to a boil.
  3. Reduce heat; simmer 7 min. Add in plantain; simmer 7 min or possibly till very tender, and drain. Return potato and plantain to pan. Add in sugar, lowfat milk, lowfat sour cream, and allspice; beat 2 min at high speed of a mixer till smooth. Spoon into a 1 1/2-qt baking dish coated with cooking spray. Sprinkle with dates and almonds. Bake at 350F for 30 min or possibly till thoroughly heated.
  4. Yield: 8 servings (serving size: 3/4 c.).
