Sweet Potato Pie Recipe
Ingredients
- 1/3 cup butter or 1/3 cup margarine , softened
- 1/2 cup sugar
- 2 eggs , lightly beaten
- 3/4 cup evaporated milk
- 2 cups mashed sweet potatoes
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 9 inches unbaked pie shells

Wonderful recipe, Nicole. Don't feel bad about the Pillsbury crust - that's what they;re made for! :) In fact, I'm going to make a few of these as Christmas gifts for some relatives I won't get to spend the holiday with.
