Directions

  1. Wash zucchini. Slice in half. Scoop out middle leaving meat on sides of vegetable.
  2. Arrange zucchini in baking dish.
  3. Chop zucchini meat, sun dried tomatoes, onions.
  4. Saute onions in butter till translucent
  5. Add sun dried tomatoes.
  6. Season with salt, pepper and curry.
  7. Add sour cream and thyme leaves to zucchini meat.
  8. Add zucchini mixture to onion mixture.
  9. Stuff zucchini.
  10. Sprinkle with parmigiana and cracked pepper.
  11. Bake uncovered for 30 minutes.
