  • 4 x jalapeno peppers, seeded and halved WEAR GLOVES
  • 1/2 x (8 oz) package cream cheese, softened
  • 2 x Large eggs, beaten
  • 3/4 tsp salt, divided
  • 1 tsp vegetable oil
  • 2/3 c. self-rising flour
  • 1/8 tsp garlic pwdr
  • 1/8 tsp paprika
  •     onion pwdr to taste
  • 1/2 c. corn flakes cereal crumbs
  • 1 quart oil for frying

Directions

  1. 1. Bring a half filled medium saucepan of water to boil. Place jalapeno peppers in the water 10 to 15 min, till tender. Drain and cold.
  2. 2. Blot dry interiors of the jalapeno peppers with a paper towel. Fill each jalapeno pepper half with approximately 1/2 oz cream cheese. In a small bowl, whisk together Large eggs, 1/4 tsp. salt and vegetable oil. In another small bowl, mix remaining salt, flour, garlic pwdr, paprika and onion pwdr. Place corn flakes cereal crumbs in a third small bowl. One at a time, dip the jalapeno pepper halves into the egg mix, the flour mix, the egg mix again, and finally the corn flakes cereal crumbs.
  3. Place coated peppers in a medium dish. Freeze approximately 2 hrs.
  4. 3. Heat oil in a large, deep skillet over medium high heat. Fry the frzn peppers 3 to 4 min each, till dark golden. Drain on paper towels and serve.
  5. Makes 8 stuffed peppers.
