Sour Cream - Blue Cheese Dressing Recipe

Ingredients
- 3-4 ounce blue cheese
- 3/4 c. salad oil
- 1 c. lowfat sour cream
- 1/4 c. cider vinegar
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 clove garlic, crushed; optional
Directions
- Soften blue cheese at room temperature. Mash with fork in mixing bowl. With mixer at low speed, gradually add in 1/4 cup salad oil. Beat till smooth. Add in remaining salad oil and all remaining ingredients, one at a time. Beat well after each addition till thoroughly mixed. Store in covered container in refrigerator. Yields 2 1/2 cups.
