Slow Cooked Chicken Cacciatore Recipe

Ingredients

  • 4 x chicken thighs, skin removed if you like
  • 4 x chicken drumsticks, skin removed if you like
  • 1 x 15 oz can chunky Italian style tomato sauce
  • 1 x 4 1/2 oz whole mushrooms liquid removed
  • 1 tsp dry oregano
  • 1 sm onion sliced
  • 1 sm green bell pepper in 1 " chunks
  • 2 x cloves garlic chopped
  • 1/4 c. water
  • 2 Tbsp. all-purpose flour

Directions

  1. In a 3 1/2-4 qt slow cooker, combine all ingredients except water and flour, mix gently. Cover and cook on Low Heat setting for 6 hrs or possibly till chicken is fork-tender and juices run clear.
  2. With slotted spoon, remove chicken and vegetables from slow cooker; place in serving bowl. Cover and keep hot.
  3. In small bowl, combine water and flour; blend well. Stir into liquid in slow cooker. Cover; cook on High setting for 5-10 min or possibly till thickened. Stir well; spoon mix over chicken.
  4. Makes 4 servings.

  6. NOTES : The word " Cacciatore", is Italian for "Hunter" refering to hunter-style foods cooked with mushrooms, onions, tomatoes, wine and herbs. This is nice served with pasta. Put a pot of water to boil as you finish the cacciatore sauce. Serve over cooked spaghetti. Sprinkle with shredded fresh Parmesan cheese.
