Ingredients

  • 1 tbsp. oil
  • 1 med. onion, finely minced
  • 1 teaspoon curry pwdr
  • 1 can cream of mushroom soup
  • 1 (4-6 ounce.) bag frzn cooked shrimp
  • 1 tbsp. minced coriander (cilantro)
  • 1 c. raw rice, steamed
  • Plain yogurt, optional
  • Dry roasted peanuts, optional

Directions

  1. Heat oil in fry pan. Saute/fry onion, stirring, till translucent/soft. Add in curry. Continue frying another 2 min. Stir in the undiluted soup. Bring to boil, stirring. Reduce heat to medium. Stir in rinsed, frzn shrimp. Heat, stirring, till shrimp are warm. Don't boil.
  2. Spoon into serving bowl. Sprinkle with minced coriander. Serve over warm steamed rice. Provide plain yogurt and dry roasted peanuts as condiments.
