Directions

  1. 1. Make vinaigrette: Whisk all ingredients together in small bowl; cover and set aside.
  2. 2. Combine lentils, water and salt in saucepan. Bring to boil, reduce heat and simmer till lentils are just tender, 20 to 25 min. Drain and keep hot. Heat oil in small saucepan over medium-high heat. Add in shallots and cook 2 min; stir into lentils and add in parsley.
  3. 3. Meanwhile, heat broiler. Line broiler pan with foil and place salmon on top. Drizzle 1 tsp. vinaigrette over each piece.
  4. Broil 4 inches from heat source 8 to 10 min, till fish is opaque.
  5. 4. Spoon lentils onto plate; top with salmon. Drizzle on remaining vinaigrette. Garnish with watercress, if you like.
  6. Makes 4 servings.
