  • 4 x chicken breasts - (8 ounce ea)
  • 1 quart your favorite margarita mix
  • 1/2 c. red onion diced
  • 1 1/2 c. diced tomato
  • 1 x jalapeno diced
  • 1/2 c. red pepper diced
  • 1/2 c. green pepper diced
  • 1/4 c. cilantro minced
  • 1 tsp Champagne vinegar
  • 2 Tbsp. margarita mix
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Place chicken in a bowl, add in margarita mix and marinade for 24 hrs.
  2. Place chicken on grill for two min, then turn a 1/4 turn and grill two more min. Turn over and repeat.
  3. Place on bun and top with Pico de Gallo.
  4. Pico de Gallo: Place all of the Pico de Gallo ingredients in a bowl and toss gently.
  5. This recipe yields 4 servings.
