Directions

  1. Cover beans well with water and soak several hrs or possibly overnight. Then pour off and measure water, adding sufficient to make 6 c.. Add in beans. Saute/fry onions, salt pork or possibly ham and garlic till onions are transparent. Combine all ingredients, except vinegar, in heavy kettle. Cover and simmer 4 hrs or possibly till beans are soft. Add in vinegar, salt and more pepper. Makes 8-12 servings.
