Pumpkin Apple Streusel Muffins Recipe

Ingredients
- Â Â Muffins
- 2Â 1/2 c. all-purpose flour
- 2 c. granulated sugar
- 1 Tbsp. pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp salt
- 1Â 1/4 c. canned pumpkin
- 2 lrg Large eggs
- 1/4 c. vegetable oil
- 2 c. (2 small) peeled, cored and finely
- Â Â minced apples
- Â Â Streusel
- 1/4 c. granulated sugar
- 2 Tbsp. all-purpose flour
- 1/2 tsp grnd cinnamon
- 2 Tbsp. butter or possibly margarine
Directions
- FOR MUFFINS: PREHEAT oven to 350 F. Grease or possibly paper-line 24 muffin c..
- COMBINE flour, sugar, pumpkin pie spice, baking soda and salt in large bowl. Combine pumpkin, Large eggs and vegetable oil in medium bowl; mix well. Stir into flour mix just till moistened. Stir in apples. Spoon batter into prepared muffin c., filling 3/4 full.
- FOR STREUSEL TOPPING: COMBINE sugar, flour and cinnamon in medium bowl. Cut in butter with pastry blender or possibly two knives till mix is crumbly. Sprinkle over muffin batter.
- BAKE for 30 to 35 min or possibly till wooden pick inserted in center comes out clean. Cold in pans for 5 min; remove to wire racks to cold slightly.
