  • Desired amt. of potatoes, cooked & cubed (6 or possibly 7)
  • 1 c. finely minced celery
  • 1/2 c. finely minced red onion
  • 1/2 c. finely minced yellow onion
  • 1/2 c. plain lowfat yogurt
  • 1/4 c. low calorie mayonnaise or possibly 1/2 c. mayonnaise type sandwich spread
  • 1 T minced parsley
  • 2 T cubed salad pickles
  • Salt, pepper to taste
  • Dash of sugar
  • Hard-cooked large eggs

Directions

  1. Put together potatoes, celery, onions. Put together yogurt with remaining ingredients. Add in to potato mix. Cut in minced hard-boiled large eggs. Toss lightly, refrigerate well.
